the last supper......

Nics cooking is always fantastic....but this night was photo worthy....simple but oh so delish!!

bruschetta mix made with all the fresh stuff......

dry roasted pinenuts.....yep theres a lot here but we do a huge batch then store to throw in salads...

garlic butter with parmesan to brush on to toasted turkish pide.....

poach an egg.....plop it on top

devour!

dessert is yummy coffee with these easy peasy biccys....i actually made these thats how easy they are!....its a recipe i nabbed from the www....think it was called 1000 cookies or 100 or something like that....but i cant remember where exactly i got it sorry....will put it at the bottom....

its a great base recipe that you can add almost anything to.....i chopped up choc buttons.

warning......cookie porn!!

1000/100/a lot! cookies
500 gram butter....room temp
1 cup sugar
1 tin condensed milk
5 cups SR flour

180 degree oven
cream butter + sugar
add  condensed milk
add flour ...its tough going to mix but keep going!

i then put mix in fridge for 10 mins....this makes it easy to roll into big long sausage shape....roll up in baking paper (i had 4 rolls about 30cm long).....back in fridge for 5 mins....then slice off cookies as thick or thin as you like (and as many as desired)
bake 10-15 mins (i did 12 mins)

freeze any unused cookie sausage....this makes a huge amount...especially if you make them bitesize.

i think its surely all been done before....but i was rather impressed how easy and tasty these were....so worth sharing.
also made a batch with white choc and pistachio.....OMG!

and it has to be mentioned.....yes im missing the chef!...and not just her delish cooking!

Axx

  1. Oh, oh, oh ... yum! I'm drooling, and I've just finished brekky. Condensed milk in anything is just so delish. Did you clean the can with your finger? That's the best part!
