all you tarts listen up...

just a warning....this is an annoyingly long cooking post....hooray if you make it to the end!!

my post about life giving you limes had a few of you requesting a recipe.
here goes...





 




 
 



yes there are dirty dishes in the sink and yes we starting eating it before I took a photo!
priorities people!
and I wanted a blow torch shot but some silly kid drama got in the way.
 
my dears heres the recipe...
 
sweet pastry for the base...
200gms castor sugar
300 gms butter
500gms flour
2 eggs
 
mix together room temp butter and sugar
add eggs
then flour
mix till comes together and resembles pastry dough
roll into big lump, wrap in cling film and chill in fridge for 30 mins (the dough not you!)
then roll out to size
(nic used a 28cm tart tin)
 
blind bake the case in a 180 oven till just cooked (no colour)
for blind baking nic uses soup mix as the filler
less air pockets than the clay beads
then pour in the filling.
 
for the filling you will need...
6 eggs
200ml fresh lemon juice
100ml fresh lime juice
120ml cream
250gms castor sugar
zest of 1 lemon
zest of 3 limes
 
 
whisk together eggs and sugar
whisk in juices
whisk in cream
I love saying whisk
 
then pour through a strainer
add zest and.....you guessed it whisk (gently).
 
now that all that yummy goodness is in your tart case bake at 160 until filling is just set and tart edges are golden.
cool in the fridge for a 30 min or so
for a little bit of added specialness sprinkle with castor sugar, pull out a blow torch from your utility belt and blast that tart!
you can of course skip this step and just devour with cream or ice cream
but...the crunchy toffee top does magical things let me tell ya!!!!
nics blow torch is just a cheapie from aldi and works a treat.
toffee shards or praline would work too!
 
but toffee top or no this tart is my all time favourite and that's saying a lot....ive had me some tarts in my day....shut up Pippa!
it has zing! and zings my thing!
probably not so kind to the hips but.....who gives a rats! its very high in Vit C...great for those winter blues.
give it a try I dare you.
 
Now....my beautiful cousin dropped in a bag of these beauties!

  12. There's nothing much better than a bowl full of lemons hanging out in a gorgy white bowl ... oh, except a lemon tart! Love that egg shot - yep, you're a clever chickadee:) Can't wait to make this recipe. Now I need me some lemons. x
